In India, mutton biriyani is quite popular among the biriyani lovers.
Items required
Mutton - 1 kg
Rice (preferably biriyani rice) - 1 kg
Cooking oil - 250 ml
Onions - 5
Tomatoes - 4
Ginger-garlic paste - 3 tab.spoon
Curds - 250 ml
Turmeric powder - 1/4 tsp.
Chilli powder - 3 tsp.
Garam masala (whole, not powder)
Chopped Pudina (mint) - 1 tb.spoon
Chopped Coriander leaves - 1 tb.spoon
Green chillies - 4-5
Lime - 1
Salt - as per your requirement
Method of cooking
Mutton should be cooked and kept ready. (The meat should be marinated with masala mix at least for an hour before cooking it.)
Heat oil in cooker, add the garam masala, chopped onions and pudina leaves. When the onion is golden brown, add garlic-ginger paste, tomato pieces, chilli powder, and turmeric powder. Stir for a moment, and then add mutton pieces and salt. Fry for a while, and close the lid and cook for sometime.
Remove the lid, and add coriander leaves, green chillies, curds and lime juice. Mix well and cook for some more time on low fire until the mutton becomes soft. By now the oil will be floating above. At this stage, the excess oil can be removed.
Cook rice in a separate vessel, until it is 3/4th done, and strain the water. Add the rice to the cooked mutton, and add the oil on the top. Close it and cook on low fire for few minutes.
