Kerala Aappam

Aappam is a favorite breakfast for Keralites. If you ever visit Kerala and enter a restaurant for your breakfast, you are sure to find Aappam there. This fluffy breakfast is really tasty.
Items required to make Aappam Rice - 1 1/2 cups
Urad dal - 1 tablespoon
Coconut - 1 cup
Coconut water - 1 cup
Cooked rice - 1/2 cup
Sugar - 1-2 tsp.
Salt - to taste
Method of Preparation Soak the rice for 5-6 hours, with urad dal, and then grind it.
Add coconut and cooked rice to the mixture and grind altogether to a fine paste.
Add coconut water, sugar and salt. Mix well and keep it overnight.
Next day morning stir well with the laddle and if necessary add little water.
Keep the aappam vessel on the stove and smear it with a bit of oil, using a small cotton ball.
Take a laddle-full of the mixture and pour it. Shake the aappam vessel gently holding both the handles for the mixture to spread evenly. Do not spread the mixture with the laddle.
Cover it up and remove it after a minute or two.
You will get a fluffy and tasty aappam, which can be eaten with egg curry, chicken curry, or any other curry.
